The CLEVER® Dripper looks like a normal coffee filter holder, but in reality it is a coffee brewer - a combination of a French press jug and a classic filter holder. The crucial difference is that the CLEVER® Dripper has a shut-off pouring valve built into its base, which keeps the coffee in the filter until it comes into contact with the edge of a coffee cup.
The resistance of the coffee cup opens the valve and the coffee flows out.
I am also bringing down the temperature of the water inside the kettle to experiment with different temperature levels that will allow the coffee᾽s characteristics to shine through. Let me know what you think of it!

Place the Clever on your coffee scale and add the coffee.
Start the timer and add 40 ml of water in a circular motion.
Let it bloom for 30 seconds and add another 80 ml of water.
Add some cold water to the kettle to bring the temperature down to 88°C and add another 80ml of water in the Clever.
Add some cold water to the kettle to bring down to 80°C.
Add the last 40ml of water in the Clever and let it steep for 20 seconds.
Place Clever back on the cup and let it drain.
Give it a little stir and enjoy!
